Chestnut flour!

I am Posting and I am Blogging. I wanted to get my hands on some chestnuts so I could try buttering them, but I learned that you can’t butter chestnuts!

Most nuts and seeds can become nut and seed butter because they are mostly fat. But it turns out chestnuts are not like most nuts. Chestnuts, you see, are mostly carbs. So my initial disappointment that chestnut butter is not possible was quickly replaced by curiosity about what is possible: chestnut flour.

A cursory internet search informed me that chestnut flour is supposed to be a pretty good gluten-free flour, so I popped over to Breadtree Farms and got a bag. I now have a secret experiment in the oven and I will share the results once it is complete.
